I want to smile when I'm eating vegetables. I want to authentically smile, none of this pretending to like it crap that so many of us do to trick ourselves into believing that kale goes down just as beautifully as a banana split. Vote for me and I will make vegetables great again. Bad pun, not sorry.

My rules for this goal.
I'm going to add 22 recipes to my personal recipe collection that are primarily vegetables. These recipes can be hot, cold, vegetarian, vegan, or include meat. The only rule is that I have to actually catch myself saying yum when I eat eat.
Below is the progress as it comes.
1 - Braised Greens
In the picture below I added caramelized onions simply because they were left over from another recipe. It was a tasty addition.


2 - Coconut Green Beans
Cooking with coconut oil is the key ingredient to this recipe. There’s something about the combination of flavors that’s magical!


3 - Sweet Green Morning Smoothie
I normally don’t like kale in my smoothies, but this combination is great.

4 - Slushie, Sweet Energy-Salad-Smoothie
Lettuce in a smoothie for breakfast sounds disgusting. This one is surprisingly smooth and yummy.

5 - Mint Chocolate Chip Smoothie
Chocolate makes me feel a little like it’s cheating, but this one’s full of greens and I love it.


6 - Seared Ahi with Avocado Wasabi Vinaigrette and Peach Salsa.
The recipe is long but oh my this meal is amazing! It made the list because it’s packed full of vegetables and it’s light and tastes like you would have ordered it in a gourmet farm to table restaurant. Oh my yummy!

7 - Baby Spinach Salad with White Beans, Beets, and Apples
You don’t have to like beans beets or apples to like this salad. The dressing recipe is used in another salad below, so make a double batch!

8 - The Alkaline Body Smoothie
Yummy! The only reason I crossed out the celery and cucumber water was because I didn’t have it at the time. To make this one go from good to great add a little bit of vanilla stevia.


9 - Red Cabbage and Apple Salad
This surprisingly fantastic combination requires two recipes. One for the salad and the second for the dressing. Pro tip: double the salad dressing and you’ll have the leftover dressing to use on another salad another day .



10 - Fresh Spinach in Hot Broth
In the winter, I get tired of cold salads. I learned I could take any kind of hot broth and drop a huge pile of baby spinach into it to make a very tasty hot salad. In the picture below I added a little ground turkey meat. Bean sprouts and soy sauce also help me smile.

11 - Toasted Quinoa with Kale and Sesame Seeds
This side dish is a fantastic way to hide tons of kale, and it’s delicious.

12 - Amansala Salad with Ginger Sesame Dressing
This salad plus the dressing takes me about 20 minutes to make if I'm not in a rush. It's worth the effort.


13 - Seared Salmon on Lentils
Packed full of veggies and yum-factor. I like this one because it's versatile. If you don't have all the ingredients it will still be tasty.

14 - Cauliflower Soup
This surprisingly creamy soup has no oil or dairy.

15 - Strawberry, Basil, Spinach Smoothie
It looks kind of gross, but it's actually very tasty!
1c frozen strawberries
2c fresh spinach
1/2 c fresh basil
1 lime peeled
1c water
Blend
